Veggie Burgers

These delicious veggie burgers are made with lentils, black beans, and quinoa.

 

Ingredients:

Burgers:

  • Veggie Burgers2 15-ounce cans black beans, rinsed and drained
  • 1 15 ounce can lentils, rinsed and drained
  • 1 cup cooked quinoa (cooked)
  • 1/2 cup oats, processed into flour (gluten-free if desired)
  • 2-3 cloves garlic
  • 1/2 red onion, chopped
  • 1 tablespoon cumin
  • 1/2 teaspoon cayenne
  • 1 teaspoon Sriracha
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup walnuts, chopped (optional)

Roasted Red Pepper Sauce

  • 10 ounce jar roasted red peppers, drained
  • 1/2 cup Greek yogurt
  • 1/4 cup sour cream
  • 1/4 teaspoon cayenne
  • 1 tablespoon olive oil

 

Directions:

  1. Preheat oven to 375 degrees F.
  2. Puree lentils with 1 can of black beans. Pour into a large bowl with the remaining black beans, quinoa, oat flour, garlic, red onion, walnuts, and spices. Mix together and taste the mixture. Adjust spices to your liking.
  3. Refrigerate the mixture for 1 hour. (This step is optional but does make it easier to form the patties).
  4. Grab a handful of the patty mixture and form into a ball. It will be sticky, but don’t worry. Place onto a lightly greased baking sheet and press down lightly to flatten. Repeat with remaining mixture to form 10 patties.
  5. Bake for 12 minutes on one side, flip carefully with a spatula and back for another 12 minutes.
  6. While the patties are baking, combine the red peppers, sour cream, Greek yogurt, cayenne, and olive oil in a food processor. Pulse until smooth. Set aside until burgers are ready.
  7. Enjoy!
