Chicken Parma Balls

Makes 16


  • Chicken Parma Balls1 lb  98% lean ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 1 tablespoon chopped parsley
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons pizza sauce


  1. In a large bowl combine the chicken, breadcrumbs, onion, parsley and ½ the cheese. Season with salt and black pepper. Using your hands gently massage the ingredients together.
  2. Preheat oven to 360F
  3. Shape into balls and place on a highly greased baking tray.
  4. Brush each ball with pizza sauce.
  5. Bake for 10-12 mins.
  6. Remove and brush with more sauce, scatter with remaining cheese and bake for another 5 minutes or until cheese is golden.
  7.  Serve with side salad or veggies.

*Feel free to add some extra spice to the chicken. It can be quite bland otherwise.
